Tasting notes
Pleasantly full, warm, robust, austere yet velvety, harmonious and ethereal, with a spicy aftertaste typical of partial ageing in wood. When young it expresses a complex, intense, rich bouquet of freshly picked ripe fruit. With maturity it develops more complex, slightly spicy and softer aromas. Deep red colour with ruby highlights that tend to fade over time.
Food pairing
Soft and with silky tannins, easy to pair with red meats, ragù and alpine cheeses that are not overly aged.
Winemaking
Manual harvest at the right stage of ripeness. Crushing-destemming every 30 minutes in horizontal vinifiers with automatic temperature control. Initial cold skin maceration for 8 hours to enhance fresh aromas. The mass is heated to 26°C for colour extraction and the start of alcoholic fermentation. Several daily skin-working cycles are carried out to soften the tannins. Malolactic fermentation is completed in stainless steel tanks. Bottled after blending in the optimal proportion to give good structure, elegance, finesse and roundness. Maturation in stainless steel and third-use barriques. Minimum bottle ageing: 6 months. Soil: fresh, deep and sandy. Viticulture: integrated production methods. Training system: double and single Guyot. Vineyard planted in 1983. Yield per hectare: 80 quintals (55 hl). Harvest time: end of September. Harvest method: manual. Contains sulfites.
